Superior Marbling

Marbling is the small, white lines of fat interlaced in the muscle fibers of beef. When beef is cooked to the proper temperature, this fat melts into the meat and produces flavorful, perfectly textured beef.

GRASS VS. GRAIN
While grass-fed cattle have a certain quality reputation throughout the industry, grain-fed cows are more readily able to produce consistent, rich marbling. That’s why Sterling Silver selects cattle that are grain-fed and only produce marbling that is moderate, slightly abundant or moderately abundant. It is important to note that while the USDA values marbling, it is never at the cost of animal welfare. This is an important distinction we also uphold at Sterling Silver.
