Butterfish Watercress Soup and Hanalei Poi

Mele Apana Is with us this week making some of her favorite dishes. The musician and radio personality of over 30 years is a Kaua’i native and graduate of Kamehameha Schools. Mel can be found emceeing many events around town and also producing music events like her annual Mothers day show. Her energy and quick wit has made her one of Hawaii’s most popular on-air DJ’s in the Hawaiian community. You can also catch her as a Pa’u rider in various parades. This week she shares her Butterfish Watercress Soup recipe.

Instructions

Put the chicken broth in a large pot and add 3 slices of ginger. Bring to a boil. Add all the butterfish to the pot. Chop up the watercress in 1-inch pieces and add the pot. Cook fish thoroughly. Add salt to taste. Serve with Hanalei Poi.
