Fresh Strawberry Pie
Instructions
1. Line unpricked crust with a double thickness of foil or parchment paper.
2. Bake at 450 degrees for 8 minutes.
3. Remove foil and bake 5 minutes more
4. Cool on a wire rack.
5. In a small saucepan, combine the sugar, cornstarch and water until smooth.
6. Bring to a boil.
7. Cook and stir until thickened, about 2 minutes.
8. Remove from heat and stir in gelatin until it dissolves.
9. Refrigerate until slightly cooled, 15-20 minutes.
10. While cooling, arrange strawberries in the crust.
11. Pour gelatin mixture over strawberries.
12. Refrigerate until set.
